Argentinian Chimichurri Chicken
Ingredients (serves 2):
▪ 1 double chicken breast
▪ 2 tablespoons of olive oil
▪ 1 clove of garlic
▪ Pepper and salt
Chimichurri sauce:
▪ 1 bunch of parsley leaves
▪ 1/4 cup of oregano leaves
▪ 1/4 cup cilantro leaves
▪ 2 cloves of garlic
▪ 1 green chilli pepper (diced)
▪ 1 shallot onion
▪ 4 tablespoons of olive oil
▪ 1 teaspoon of wine vinegar
▪ Pepper and salt
Preparation:
▪ Season the chicken breast with salt and pepper, rub with the minced garlic, brush with olive oil, and put in the fridge for 30 minutes.
▪ After this time, fry in a pan (3 minutes on each side) and then bake on a baking tray in the oven at 180 ° C for 20 minutes or grill.
▪ Prepare chimichurri sauce by blending all ingredients until smooth.
