Ingredients (serves 2):
- salad mix
- cherry tomatoes
- cottage cheese
- cooked chicken breast or ham with no visible fat
- chopped nuts
- 80g of raspberries
- ½ teaspoon of a balsamic vinegar
- 2 tablespoons of extra virgin olive oil
- pinch of salt and pepper
In a large bowl mix olive oil and balsamic vinegar and raspberries. Season with salt and pepper.
Mash the ingredients and mix well.
Top the salad with the chicken breast or ham, add halved tomatoes, rocket, raspberries, nuts and cottage cheese. Serve with vinaigrette.
