Courgette Soup
Ingredients:
▪ 250 g courgette
▪ 500 ml broth
▪ 1 leek
▪ 1 garlic clove
▪ 1 tablespoon olive oil
▪ 1 teaspoon turmeric
▪ salt and pepper
Preparation:
▪ Heat the olive oil in a pot and fry previously sliced leek and minced garlic.
▪ Add the diced courgette and fry for 3-5 minutes.
▪ Add the broth, bring to boil, season with salt and pepper and cook for around 15 minutes.
▪ Blend until smooth.
Optionally:
Serve with crushed feta cheese and/or chopped parsley.
